When does Greirat return? After you send him out to pillage for the first time. There's a few conditions but the first being after you defeat a boss. I'd look him up on the wiki if i were you as he can also die if certain conditions are not met. He should come back alive on his first excursion though. Igel.

If you want to send Patches, send Greirat, reload firelink, then send Patches, reload firelink to make sure he's gone, then go on. If there is no rescue plan in place, by the time you reach the sewers (maybe earlier), Greirat is dead.
